It is a white crystalline powder with a slight sulfur odor. It is toxic if inhaled. It is a strong irritant to the skin and tissue. When mixed with water, it acquires corrosive acidic properties.

SMBS is an inorganic sodium salt composed of sodium and disulfite ions in a 2:1 ratio. It generally acts as a food antioxidant. The structure of Sodium Metabisulfite contains bisulfite.

When dissolved in water, it releases SO3 and HSO3 ions into the medium.

How is it Produced?

Sodium Metabisulfite (Sodium disulfite) is produced by treating a 50-70% sodium hydroxide or sodium carbonate suspension with gases containing sulfur dioxide in a saturated sodium hydrogen sulfite solution. It is removed by centrifugation and then dried.

The production reaction for this chemical is as follows:

Na2CO3 + 2SO2 》Na2S2O5 +CO2

Another method of production is through thermal dehydration. It can also be prepared by passing sulfur dioxide through sodium carbonate.

These are the dominant methods for producing this raw material, varying based on cost advantages and installation expenses.

Sodium Metabisulfite is a chemical that is sensitive to air and moisture. Therefore, contact with air and water should be avoided. It must be stored in dry areas.

It is a stable chemical. It is incompatible with strong oxidizing agents and strong acids. Contact with strong acids releases toxic gas.

Working Principle in Foods

The cheapest and most effective anti-browning agents are sulfites. Through the action of sulfites, quinones produced by the catalysis of polyphenol oxidase are reduced to less reactive and colorless compounds. Sodium Metabisulfite reactions prevent this pigmentation from occurring.

In the baking industry, the sulfite level in ingredients used to make dough is low. Sulfites act by breaking the cysteine disulfide bonds in the gluten fraction of the dough. They emerge with the dissolution of this raw material. It exists in several forms: SO2, HSO2, SO3-2 and S2O5.

  • It is used in the oil and gas industry. It is used as a whitening agent in the production of coconut cream.

  • It is used as a corrosion inhibitor in the cyanidation processes of commercial gold for the destruction of cyanide.

  • SMBS is used as an antioxidant and bleaching agent in soft drinks, fruit juices, canned goods, wines, and in the production of sauerkraut.

  • The chemical that acts as an oxygen scavenger to remove dissolved oxygen from wastewater and pipes is SMBS.

  • In the gold mining industry, it is used to precipitate gold from auric acid and in wastewater treatment to remove trivalent chromium after a reduction process.
